I’ve been private cheffing for over 2 months now, and I’m having the time of my life. Honestly, I need a whole separate post to share everything I’m feeling! In the meantime, I’ve been posting lots of the meals I’ve made on Instagram and I’ve gotten so many DMs requests about sharing these three recipes in particular. I’m breaking them down below so you can recreate them at home!
Crispy Smashed Potatoes
Broccoli Cheddar Chicken Nuggets (great for kiddos and adults)
Cauliflower Mash
Crispy Smashed Potatoes
These are so easy and a really fun take on potatoes!
Ingredients:
Serves 2
1 bag of red or yellow baby potatoes
Olive oil spray
Italian seasoning
pinches of salt and pepper
Shaved parmesan (optional)
Directions:
Preheat oven to 375.
Boil baby potatoes in water for about 15 minutes or until a fork can pierce through the potato.
Move potatoes to a baking sheet that has been sprayed with olive oil.
Use a measuring cup to mash down each potato gently until flattened (they shouldn’t be paper thin or else they’ll crumble - I’d say a little less than 1/2 an inch)
Give the potatoes another spray with olive oil and/or avocado oil.
Season with a few pinches of italian herbs, salt, and pepper.
If you want to add parmesan to make them even crispier, add a sprinkle on top of each potato before you place in the oven.
Add the potatoes to the oven at 375 for 30-40 minutes or until golden brown
Broccoli Cheddar Chicken Nuggets
These were such a crowd pleaser for my private chef clients for both the adults and the kids!


Ingredients:
Makes about 15 nuggets
1lb of ground chicken
3/4 cup of broccoli (boiled for about 5-7 minutes)
1/2 cup of mild cheddar
4 tablespoons of parmesan cheese
1/2 cup of plain breadcrumbs
1/2 cup of panko
1/2 teaspoon of garlic powder
1/4 teaspoon of paprika
1/2 teaspoon of sea salt
1/4 teaspoon of pepper
Directions:
Preheat oven to 375.
In a mixing bowl combine ground chicken, boiled broccoli, mild cheddar, parm cheese, and seasonings, and mix until combined.
In a separate bowl, mix together breadcrumbs and panko.
Wet hands slightly to help form nuggets. Once formed into desired shaped, dip them into the breading mixture and ensure each side is covered.
Place each nugget on a greased baking sheet.
Once all the nuggets are made, place them in the oven for 30 minutes at 375, flipping one time halfway through.
For extra crispiness, turn on broil for 1-2 minutes.
Cauliflower Mash
You can make this dairy free or with dairy. Both options taste amazing!
Ingredients:
1 medium head cauliflower (or about two bags)
2 tablespoons olive oil or butter (can sub vegan butter with exact ratio), melted
7 roasted garlic cloves
1/4 teaspoon Dijon mustard
1/2 teaspoon sea salt
a dash of pepper
Chives (optional)
Directions:
Cut and boil cauliflower in water on stove top for about 10 minutes.
Add cauliflower and remaining ingredients to a blender and mix.
If the mixture is too thick, add small amounts of water and continue to blend until a thick and blend-able mixture forms, and serve.
